Taleggio is a cow's milk cheese from the Lombardy region of Italy. The body of the cheese has a uniform and solid consistency. It is softer just under the rind and, once the ageing process is completed, it's quite crumbly in the middle. The flavour of this cheese is sweet, slightly sour and a vaguely aromatic, sometimes with a hint of truffle. It has a characteristic aroma. 

Provolone Valpadana cheese is made from milk curd with added calf, kid goat and lamb rennet, either individually or together. The two varieties of Provolone Valpadana are: sweet Provolone Valpadana and sharp Provolone Valpadana. Both types of Provolone Valpadana also come in smoked varieties. The Padana Valley produces large quantities of milk, which is perfect for cheese making, as well as offering the infrastructures necessary to guarantee a high-quality end product.

Salva Cremasco cheese is a fresh, soft, washed-rind cheese, made exclusively using full-fat cows' milk. Salva Cremasco is a white cheese which takes on a yellow hue the longer it is aged and some signs of proteolysis immediately below the rind. It has an intense, aromatic flavour which becomes stronger in varieties which are aged for longe.
